I'm Back

Hello Blogger world!  I'm back (sort of).  I've been on hiatus because I've been busy with being pregnant and now being a new mommy to our little baby boy.  He's truly a blessing from God.  God answered our prayers shortly after Mother's Day 2013.  We found out we were pregnant in May and it has been a whirlwind since.  After four baby showers (yes, we were very blessed to have been given four) thrown by my work, my out-of-state family, my best friends and my husband's family here in California, our little bundle of joy arrived (literally the same night after the last shower).  He arrived four weeks earlier but we're very thankful that he was developed enough that there were no major complications.  A few new mommy scares here and there but overall he's a healthy little angel.  I think with the new addition, an update to the banner would probably be in order.  Hope I get to update more soon.  I'll try not to bombard this blog with all baby stuff... but sometimes I won't be able to help it so you have to bear with me.  I am a new mama after all.  :)

Woven Wall Hanging Project

Got inspired to do my own woven wall hanging and so I made a loom yesterday using materials I already have.  I'm now playing around with weave patterns.  Hopefully it turns out great and I'll be able to post a tutorial.  Wish me luck!

First Try:COOK SIMPLE - Tamale Pie - Gluten Free, Whole Foods, No Added Sugars

First, let me just preface this by letting you know that due to a slew of health issues, I pledged this year that I would improve my health by incorporating more organic whole foods into my diet and eating less processed food.  I'm not really a cook and I can't really say I love to cook.  I've only really cooked out of a necessity but now due to this "lifestyle change" (let's see how long this lasts), it's now more of a necessity than ever.  For the past couple of months, I've signed up for a CSA that delivers local organic produce and I have also been picking up more organic produce at our local Fresh and Easy and Trade Joe's. Whole foods, yay right?!  No, not really yay.  Other than juicing, salads, grilling and stir-frying vegetables, I don't really know what to cook or make.  One can only make or consume the same things for so long so I've been scouring the internet for recipes.  I think it's a lot of pressure to make something edible that my husband and I will both like.  Fortunately, we live in the age of technology and a newbie like me can find a wealth of information from the trusty internet.  Anywho, look out for more recipes and health food postings as part of my "First Try" series.  I promise to give you an honest review and let you know whether it's delicious or tastes like booty.  I'll also include the dear husband's take on the food, if he has any.  He's really not the biggest fan of most health food stuff.  Juicing, he'll do.  Other than that everything is just "mehh".

So onto our first "FIRST TRY" posting.  This one is sort of a cheat.  Not really a healthy "recipe" per se but more of a review of a healthy Hamburger Helper-esque food that I picked up from Fresh and Easy.  It calls for ground turkey, egg, diced tomatoes, honey and cheese.  I used ground beef instead since I didn't have ground turkey and I diced some organic tomatoes.  I also used raw honey for the cornbread portion of the tamale pie.  It only took 30 minutes and was extremely easy to prepare.  It's delicious, a little sweet and plenty of flavorful spices.  The dear husband liked it even though it had black beans, which is a pretty big deal  because he hates beans.  He said he could do without the beans and wished it was a little spicier though.  Other than that "pretty good".  So would I make this again? Yup.  It's healthy, delicious and easy to make.  Great for quick dinners.  I'm definitely going to pick up more of their brand of food next time.
